The Sushi and Sake Festival Menu at Pechanga Resort Casino – Orange County Register

The Sushi and Sake Festival returns to the Pechanga Resort Casino in Temecula on Saturday, April 8th.
Guests can expect to taste more than 40 types of sake, including daiginjo, ginjo, junmai, and sparkling varieties, as well as eight different types of Japanese beers.
Ray Jalili, manager of Umi Sushi and Oyster Bar on the property, has previously worked on pairing wine and food for other events, but said pairing sushi with sake offers a unique experience.
“It’s more about pairing it with the different buns because you have more flavor combinations,” Jalili said. “Sake is a wonderful medium because you have a lemony and floral tone that suits most fish.”
Jalili said some fresh-cut fish dishes include sashimi tuna, yellowtail, and hamachi crudo. Attendees will also witness a 100-pound tuna being sliced and sliced into sushi rolls by Kiyo Ikeda, Executive Chef at Umi Sushi & Oyster Bar.
“Guests should be hungry and ready to enjoy lots of sushi, sake and Japanese beer together and see what appeals to them,” Jalili said.
The event also includes live music by a traditional Japanese taiko drummer, Japanese guitarist and harpist, and a silent auction benefiting Habitat For Humanity Inland Valley. Items auctioned include travel packages, designer handbags and sports memorabilia.
Tickets to the one-day, 21-plus only event, held at Pechanga Summit, include a sushi, sake, beer, and dessert tasting and cost $120 for general admission; $160 for VIP; and $75 for those just tasting edibles.
Here is a list of the different stations and food options offered at the Sushi and Sake Festival.
Yasai Station (Vegetable):
asparagus gomaae served with sesame dressing; Wild mushroom kinoko oroshi served with grated daikon, ponzu and truffle oil; and Nasu Agebitash, a crispy eggplant marinated in dashi soy with ginger, scallions, and sesame oil.
Zensai Station (Appetizers):
Buta Shabu Shabu pork with cucumber, celery, shiso and ginger vinegar; takoyaki (squid balls) with scallions, itoyori bonito and okonomi sauce; yakitori chicken with spinach; and Crispy Wakasagi with Kaiware, smoked paprika and sansho pepper and salt.
Hibachi Station:
scallops with pea sprouts, bean sprouts and ginger sauce; Prawns with pea sprouts, bean sprouts and ginger sauce; Wagyu Roast Beef with Chinese Cabbage, Ponzu and Yakiniku Sauce.
Shokuji Station (savory snacks):
Soy ramen with pork, fish cakes, scallions, garlic and scallion oil; Salmon Teriyaki Rice with Micro Chives and Shiroteriyaki Takuan; and Gyudon served with rice and beef.
Sushi Station:
Sashimi platter served with toro, tuna, salmon and yellowtail; spicy tuna rolls; California rolls; and vegetable buns.
