Pasadena-based restaurant chain Dog Haus is on a mission to take sausage to places it’s never been before.
It’s called the Absolute Würst bratwurst series and has set itself the goal of introducing a monthly bratwurst based on a popular food.

According to chef Adam Gertler, the series began with a challenge from chain co-founder Hagop Giragossian: “What if we just put everything in the sausage?”
That job falls to Gertler, the chain’s “sausage maker” and a TV personality who hosted “FX Movie Download” and ran for Food Network Star.
Gertler said in a phone interview that his goal is to get all the flavors of popular dishes into a meat grinder.
The series kicked off February 1 with Nashville Hot Chicken Sausage, which will be available at Dog Haus’ 52 restaurants through the end of the month or while supplies last.
Making a sausage out of the popular chicken sandwich was a challenge for Gertler.
“We wanted to coat it like fried chicken. Getting the breading for fried chicken onto the sausage was a bit tricky because the surface of the sausage is so smooth,” he said.
“We had the idea of making a skinless sausage, so we make a gutless chicken sausage. And then we can roll it in our breading machine and then into a wet batter and then back into the dry breading machine. And that makes the coating stick really well. Then we could just treat it like we’re treating Nashville Hot Chicken.”
Gertler has the rest of the year planned out, but he’s still working out how to do most of it. For example, he’s planning an Al Pastor sausage for May, but said it might be interesting to get pineapples. And he’s hoping to make a mac and cheese in June. He could make a mac and cheese sausage in his home kitchen, but making it in 300-pound batches might be a challenge.
“We had to figure out how to make macaroni and cheese at the sausage factory because they’re not necessarily set up for that. And then how do we get paid for it through the sausage?”
Then he has a wish list of creations he’s “not sure about yet.” It features a sushi sausage, with raw fish being the challenge.
“I imagine you wouldn’t have to cook all the way.”
In addition to the hot chicken sausage from Nashville, Gertler has a sausage ready for production. That’s his corned beef and cabbage sausage coming to the menu in March to celebrate St. Patrick’s Day.
He wanted to put the cabbage in the sausage instead of serving it as a condiment. He solved this challenge by salting the cabbage and letting it sit overnight instead of boiling it before adding it to the mill. He is happy with the results.
“So far this is my favourite. The flavor isn’t far from a hot dog, but it’s very hot and flavorful, just like corned beef,” he said.
“Getting it with just mustard or just plain gives you the whole corned beef and cabbage experience.”
April’s sausage will be a pepperoni pizza made with Italian fennel sausage mixed with chopped pepperoni, mozzarella and parmesan cheese, tomatoes and oregano. It is served on grilled King’s Hawaiian Rolls
Dog Haus will follow Gertler’s progress with a series of videos on social media titled “How the Sausage is Made.” It begins with a 22-minute video on YouTube dedicated to Nashville’s hot chicken sausage. It has garnered more than 1,000 views on YouTube since January 31.
“People think, ‘We don’t want to know how the sausage is made,'” says Gerlier. “We’re like, ‘Yes, you do.'”
