Meet the 3 chefs participating in the Opening Week of Long Beach Black Restaurant – Orange County Register

Long Beach will celebrate its culinary richness with its grand opening Black Restaurant week, will take place across the city from January 23 to 30 with more than a dozen participating locations.

“It was a celebration owned by the blacks restaurant Terri Henry, event organizer said. “A lot of these are moms who may not have the funds to get through times like these,” she said.

Boujie Crab

Story: Nickey McKnight didn’t want to open a restaurant when she found what is now her fine-dining restaurant Cajun and Creole location The Boujie Crab, where she serves dishes including boiled seafood, sandwiches Po-Boy sandwiches, gum, mac and cheese and other classic Cajun treats.

The New Orleans native at the time was working in finance and real estate so she thought this place, when it was a pizzeria, would be a good location for one of her clients. she. But in the end, she decided to put her lifelong love of food and culinary skills to work, so she landed the spot for herself and in March 2020 she opened The Boujie Crab, where she is the chef.

Restaurant Week special offer: Special for Black Restaurant Week is Jambalaya seafood pasta with homemade alfredo sauce, beef sausage, chicken and shrimp jumbo.

“You feel like you’re at Mardi Gras,” says McKnight.

Also scheduled for Restaurant Week are grilled shrimp with garlic mashed potatoes and jumbo shrimp topped with homemade Cajun butter sauce.

And for those who prefer fried rice, The Boujie Crab will also offer Cajun-style fried rice with veggies, Cajun butter sauce, crab, and the option to add shrimp and lobster claws.

Gone Loco Food Truck

Story: Self-taught chef Vida Virgillito has enjoyed a successful two-decade culinary career most recently cooking at the now-closed Chianina Steakhouse in Long Beach. During her professional career as a chef, Virgilito has also dabbled in hot sauce making as a side gig. That grew into a sauce business called Loco Lito’s. Her hot sauce was eventually sold in some stores and used in other restaurants.

But when Chianina closed in early 2021, Virgilito decided to open a food truck makes a variety of dishes cooked with her hot sauce, which are also served as accompaniments, so be prepared to heat if you eat at Gone Loco.

“Everything is spicy on my truck, everything,” she said. “If someone asked me for something that wasn’t spicy, I would tell them it would cost more,” she jokes.

Restaurant Week special offer: Virgilito is serving a sandwich called My Chick Bangin’ made with breaded chicken breast with spicy pickles dipped in “Fire” sauce. It is served with French fries, seasoned with cayenne and ghost peppers, sprinkled with parmesan cheese and garlic.

Mac and cheese fans can order the Fire Mac, topped with pulled pork, hot Cheetos, and Virgilito’s spicy Son of a Peach barbecue sauce. The menu will also feature beer-infused firefish tacos and for dessert, she’s making a spicy cheesecake with pepper jelly. She makes jelly with habanero and ghost peppers and fruits including mango and pineapple.

Bradley will be serving her restaurant week specials at an unspecified pop-up restaurant during the week, and people will also be able to order online and have food delivered to her home.

Restaurant Week special offer: While she’s still finalizing the menu, Bradley plans to serve the grilled chicken and cornbread pizza pizza on a garlic flatbread topped with Sriracha barbecue sauce, bacon, and onions.
