Japanese milk bread is the secret weapon at this sandwich shop in La Habra

Started immediately and until further notice I decided to eat more burgers. Each month, I’ll eat as many burgers or cheeseburgers as I can, and then I’ll pick a favorite to highlight. I gave myself this assignment a few weeks ago, so I’ve been busy.
First words: I love the truffle burgers at EggBred in La Habra. Yes, it’s full of arugula, but listen to me.
EggBred, if you don’t already know, is primarily in the business of making breakfast sandwiches. But they also make great burgers at lunchtime. (They flirted briefly with dinner but only returned to breakfast and lunch.)
Vermicelli on burgers (and most breakfast sandwiches too) is a type of Japanese milk bread, soft and spongy like cotton candy. Stuffed inside this little cloud is a wonderfully high-quality angus beef layered with crisp cheddar cheese, some deep-fried onion straws, and truffle mayo balls and smoked jalapeño ketchup. Add some arugula. It’s a pretty small burger. You may need two. It is really delicious.
For what it’s worth, beer potatoes can be pretty but they don’t taste great. They taste more like some kind of extrusion than actual “spiral-cut” potatoes. You better eat another burger.
